Marry Me Chicken Soup

This "marry me chicken soup" recipe has quickly become one of my favorite comfort foods. Boasting a rich and creamy tomato and cheese broth with hardy ingredients like chicken, pasta and spinach, creates a bite packed full of delicious comforting flavors. If you are curious where this "Marry Me Chicken Soup" recipe gets its name from, it is an adapted recipe from Delish creator Lindsay Funstons Viral chicken recipe. Apparently one of the producers tasted her dish and stated, "i'd marry you for that chicken," thus the marry me chicken was born. I should point out that Funstons recipe is not a soup and features sun dried tomatoes rather than canned. If you prefer a sweet and chewy texture, then please feel free to swap the canned tomatoes out for 1 cup sundried tomatoes.

Add to the same pot your diced onions. Reduce heat to medium and sauté 2 minutes then add minced garlic continuing to cook another minute.
Add remaining ingredients except, noodles, spinach and shredded cheese. Cook together until cream cheese is melted, then add noodles.
Continue to cook until noodles are al dente then add cheese and spinach. Cover and let simmer over low heat until spinach is wilted.
Taste your soup and add more seasoning or liquids as desired.
Serve hot with a sprinkle of shredded old white cheddar cheese.
