Lasagna Soup

Lasagna Soup

This velevety lasagna soup, features a rich and tangy, tomato and beef based stock, reminiscent of homemade lasagna. It's a warm and comforting meal that keeps you wanting more.


Ingredients:

1 lb Ground Beef/Pork Mix

1 Can Spaghetti Sauce

3 Cups Water

2 Cups Milk

1 Can Tomato Paste

3 to 4 Tbsp Beef Stock Powder

1.5 Tsp Dry Basil

1.5 Tsp Dry Parsley

1.5 Tsp Dry Oregano

1 Tsp Ground Pepper

1/2 Tsp of Salt

2 Large Onions, Diced

1 Can Sliced Mushroom or (2 cups fresh)

6 Garlic Cloves, Minced

1 Cup Sour Cream

1/2 Cup/Brick Cream Cheese

2 1/2 Cups Mini Lasagna Noodles

2 Cups Shredded Mozzarella Cheese (for topping)


Directions:

  • Saute ground beef/pork in a large pot, add diced onions, sliced mushroom, salt and pepper. Add minced garlic just prior to being fully cooked.

  • Once cooked, add remaining ingredients (except noodles) and cook together for atleast 10 minutes, stirring occasionally.

  • Meanwhile, add noodles to a pot of salted water and cook to al dente. Strain and finish cooking in your soup for another few minutes.

  • Check the taste of your soup. Add additional seasonings as desired.

  • Serve hot and top with shredded mozzarella Cheese.
