Beef Ramen Bowl

This beef ramen bowl recipe was created for my kids as they love those quick cook remen noodles. I wanted to create a fresh and healthier version for them to enjoy. At first they said "ew what is that?" but once they had the first bite they were hooked! There words were, "this is the best dinner ever!" Music to my ears as a mom with young children. The broth is rich with flavor with just a hint of warmth thanks to the addition of curry. Curry is not the dominant flavor but merely loans are warm comforting taste that keeps you wanting more.

Although candied carrots might seem like an odd paring in a beef dish, when you combine a sliver or two with each bite, it is the most incredible pop of both sweet and savoury that is so well balanced even i was surprised.

Ingredients:

  • 1 lb Ground Beef

  • Pinch Salt and Pepper

  • 6 Cups Water

  • 5 Tbsp Beef Stock Powder

  • 1 Tsp Curry Powder

  • 1/4 Tsp Cayenne Pepper

  • 1 Tsp Garlic Powder

  • 1/4 Tsp Paprika

  • 1 Tbsp Parsley Flakes

  • 2 Tbsp Soya Sauce

  • 1 Tsp Worcestershire Sauce

  • 1 Head Garlic, Minced

  • 2 White Onions, Diced

  • 1 Cup Mushrooms, Sliced

  • 2 Celery Stocks, Thinly Diced

  • 3 Green Onions, Diced (for topping)

  • 4 Soft Boiled Eggs, Sliced

  • 1 Square of Rice Noodles (ramen)


Candied Carrots:

1 Carrot, Peeled and julienned

1 Tbsp Butter

1 Tbsp Brown Sugar

1/4 Tsp Ginger Powder

Directions:

  • To a large pot add ground beef, sauté until cooked and browned. Add salt and pepper.

  • Add mushrooms and white onions half way through and cook together with the beef.

  • Once fully cooked add remaining ingredients from ingredients list excluding the rice noodles. Cover and let simmer for 15 minutes. check for flavor and add more of any spices you desire.

  • Meanwhile, add to a small pan ingredients listed under "candied carrots". Cook together for 5 to 10 minutes until carrots are cooked.

  • Add rice noodles to your pot and allow to cook in the beef broth. (approx 8min)

  • Once noodles are cooked, serve hot in a bowl. Top with fresh green onion, candied carrots and a few slices of egg and enjoy!
