This Chocolate chip banana bread is perfectly moist with a hint of cinnamon and chocolate chips, it's a delicious and comforting treat. I often have a few too many bananas that end up in the freezer that I save just for making banana bread. Don't throw those browning bananas away, they are still good! This recipe is easy and delicious. You can make a large batch and place the extra loaves in a Ziploc or air tight container and store it for another day. Bring them along to a family dinner or share them with your friends and family. Can be enjoyed warm or room temp with a spread of butter on top and for me a hot cup of tea on the side. However you like it, make it your own enjoy every last crumb.
Makes 2 loafs, OR 16 mini Loafs (mini loafs shown in pictures)
Ingredients:
- 5 to 6 Ripe Bananas
- 2/3 Cup Vegetable Oil
- 3 Cups All Purpose Flour
- 1 1/2 Cups Brown Sugar
- 1 Tsp Baking soda
- 2 Eggs
- 1 Tbsp Vanilla extract
- 1 Tbsp Cinnamon
- Pinch of salt
- 1 Cup Semi Sweet Chocolate Chips
Directions:
- Preheat your oven to 350F, and set aside 2 greased loaf pans
- Add to a large bowl peeled bananas. Mash using a fork then add in the oil, mashing together. Stir in your eggs and vanilla.
- Add in the remaining ingredients and blend together until combined.
- Pour into your prepared baking pans and bake for 45 to 55 minutes for full size loaves or 30 to 35 for mini loaves, until a tooth pick inserted comes out clean.
- Remove to a cooling rack and allow to cool completely before storing in an air tight container.
- Can be enjoyed hot or cold. I enjoy my with a little bit of butter spread on top and melted.
