With it's warm savory flavors thanks to curry spice and cream, this chicken curry recipe is very easy to make and packed full of Indian flavors. Add a dollop of sour cream for that perfect creamy tang. We enjoyed this with some homemade tortillas in wrap format or by using pieces of tortilla to scoop the chicken up with. You could also serve this over a bowl of buttery rice. The joy of cooking at home is you get to make it your way, however you choose to enjoy it,
Ingredients:
3 chicken breast
3 cups cream (or milk)
1 cup sliced mushrooms
2 onions diced, small
1 bell pepper diced
6 cloves of garlic minced
2 tbsp corn starch
4 tbsp curry powder
2 tbsp fresh cracked pepper
1 tbsp salt
1 cup of cooked rice
Sour cream for Topping
Directions:
Chop your onions, mushrooms, garlic and peppers. In a hot pan with 3 tbsp of butter, sauté your mushrooms, and onions. Once lightly Brown add your pepper and minced garlic, salt and pepper. Sauté for another 2 minutes then remove from the pan and set aside.
Add to that same pan your diced chicken breast on medium high heat. Once fully cooked add your veggies back to the pan.
Add 2 cups of cream to the pan along with your curry powder. Add to the remaining cup of cream your cornstarch and blend together. Once your sauce mixture is simmering, add your corn starch mixture and stir together until thickened.
Cover and let simmer for a few minutes on low heat.
Add your cooked rice to the pan or serve separately if desired.
Serve in a wrap or pita or eat over rice. Add a good sized dollop of sour cream on top and enjoy!
