This super creamy corn chowder is packed full of delicious sweet corn flavor, veggies, bacon and cream. With the most scrumptious broth, I found myself eating way more then I needed to because I just couldn't get enough. I love corn on the cob smothered in butter and salt, plus its kind of fun to each. Setting aside my joy for eating corn as it comes, this soup takes my love for corn to a whole new level. Corn on the cob brings me back to my childhood. There was a time when I was missing both of my front two teeth and I can remember the struggle of eating corn on the cob but still loving every bite. Something tells me I would have loved this soup, especially since its easier to eat with a few less teeth! If you are a lover of corn and soup then this is the recipe for you.
Ingredients:
3 Cup Milk
2 Cups heavy Cream
4 Tbsp Chicken Stock Powder
1 Tsp Oregano
1 Tsp Basil
1 Tsp Parsley
1 Tso Salt
1 Tsp Pepper
1/4 Tsp Cayenne Pepper
4 White Potatoes, Peeled and Diced
3 Carrots, Peeled and Diced
2 Large Onions, Diced
Half a Head of Garlic, Minced
2 Stocks Of Celery, Small Diced
Minimum 6 Cobs Sweet Corn, (removed from cob)
1 Pack Bacon
Directions:
Add to a large pot, diced bacon, cook until crisp then set aside leaving grease in the pot.
Add onions to the bacon grease and sauté 2 to 3 minutes. Add minced garlic and sauté another minute.
Add milk, cream and seasoning following by the remaining veggies. (Do not add the cooked bacon) Stir together and let simmer until veggies are tender.
Once everything is cooked, taste the broth and check if additional chicken stock powder or seasoning is required.
Portion into a bowl and top with your crispy cooked bacon and enjoy.
