Tomato Macaroni Soup

spoon full of elbow noodles and tomato soup
Tomato Macaroni Soup

This creamy, savory and family friendly soup, is a play on one of my childhood favorites. My mom and I use to go to a local restaurant and have tomato macaroni soup once a week. I made this for my girls for dinner and they said "I want this for dinner every night!" Not only is it delicious, its also very simple and quick to make. Give it a try and let me know what you think.

Ingredients

1 Can Campbell's Tomato Soup

1 Can Milk or Cream

2 Cups of Water

2 Tbsp Beef Stock Powder

Pinch Pepper

1 Tsp Dry Basil

Cheddar Cheese, shredded for topping

1 1/2 Cups Elbow Macaroni Noodles

Directions:

- Boil elbow noodles in salted water cooking only half way then drain and set aside. ( will finished cooking in the soup)

- Add to a medium size pot over medium heat your tomato soup, milk, water, beef stock powder, pepper and basil. Bring up to a simmer then add your partially cooked and drained noodles.

- Simmer together until noodles are fully cooked. Serve hot and top with shredded cheese.
