Chicken Burrito Bowl

This chicken burrito bowl recipe pleases all the senses with both sweet and savory flavors accompanied by a satisfying blend of textures with crunchy vegetables, refreshing smooth and creamy corn slaw, sweet and spicey warm molasse black beans, juicy chicken tossed in toasted panko crumbs served on a bed of fluffy white rice and a lemon garlic aioli to tie it all together. Mix it up and add a different variety of vegetables to make it your own.

Ingredients:

  • 2 Large Chicken Breast

  • 1/4 Cup Honey Wood Smoked BBQ sauce (or your favorite sweet BBQ sauce)

  • 1 Large Carrot, Peeled and Julienned

  • 1 Cucumber, Sliced

  • 1 Green Bell Pepper, Diced

  • 1 Cup Panko Crumbs drizzled with 1 tbsp Olive oil and pinch of salt

    Rice

  • 2 Cups White Rice, cooked with 2 Cups water, with pinch of salt and 2 tbsp butter.

    Black Beans in Molasses

  • 1 Can Black Beans

  • 2 Tbsp Molasses

  • 1.5 Tsp Taco Seasoning

    Corn & Feta Slaw

  • 1 Can Sweet Corn, Drained

  • 1/4 Cup Feta Cheese

  • 1 Tsp Dry Dill

  • Pinch Salt and Pepper

  • 2 Tbsp Mayo

    Lemon Garlic Aioli

  • 1 Cup Mayo

  • 2 Tbsp Lemon Juice

  • 3 Garlic Cloves, Minced

  • 1 Tsp Garlic Powder

  • 1 Tsp Paprika

  • Pinch of Salt and Pepper

Directions:

  • Add rice, water, salt and butter to a pot, cover and bring up to a boil. Once boiling turn heat off and leave covered allowing to cook.

  • Add to another pot your drained black beans, molasses and taco seasoning. Cover and let simmer.

    • *Note: feel free add salt, pepper or more taco spice if desired.

  • Prepare your vegetables, wash, peel and slice, then set aside.

  • Add to a frying pan a tbsp or so of cooking oil, then add diced chicken, once fully cooked add desired BBQ sauce, i prefer a sweeter variety as it creates a perfect balance of both sweet and savory with a hint of spice in the beans.

    • *Note: feel free to add salt, pepper, taco seasoning or other preferred seasonings.

      Meanwhile....

  • For the corn slaw, add to a bowl your mayo, salt, pepper, feta cheese and dill. stir together then add your drained corn and combine. refrigerate until ready to serve,

  • In a separate bowl add all ingredients listed under lemon garlic aioli and combine. refrigerate until ready to serve.

  • Add to a lined baking tray your panko crumbs, drizzled with oil and salt. I toast them in my toaster oven until golden brown. You may need to remove and flip halfway through. Alternatively place in your oven on broil and watch closely so not to burn. Once browned removed from oven and set aside.

  • Toss Chicken in toasted breadcrumbs just prior to serving.

  • Fluff rice with a fork and add a few extra tablespoons of butter if desired.

  • Add to a bowl a serving of rice, then in sections (reference photo above) add a few spoonfuls of corn slaw and molasses beans, chicken with panko crumbs, as well as your julienned carrots, green peppers and sliced cucumbers. Add a dollop (or drizzle) of your Aioli to finish.

  • Enjoy!
