Mexican Taco Rice

This Mexican taco rice bowl is loaded with flavors that will keep you coming back for more. Featuring a savory thick meat sauce loaded with beans, corn, and tomatoes made easy in one pot. Mix it up and add your favorite taco inspired ingredients. Whether it's sweet or savoury, let it be made with love!
Ingredients:
1.5lb Ground Beef
1 Can Diced Tomatoes
1 Can Rinsed Black Beans
1 Can of Peaches and Cream Corn
1 Bell Pepper, diced
2. Medium Onions, diced
6 Cloves Garlic, minced
3 to 4 Tbsp of Taco Seasoning
1.5 Cups Beef Stock
1 Can Tomato Paste
Salt and Pepper to taste
SIDES:
3 Cups White Rice, cooked
Lime wedges
1 Cup Sour Cream with zest of 2 limes and juice (for topping)
Shredded Cheddar Cheese (for topping)

Directions:
To a large pot add your ground beef, once cooked add in remaining ingredients from ingredients list, cover and let simmer for 20 minutes.
meanwhile cook your rice with equal parts water and rice, 1tbsp butter and a pinch of salt.
Once cooked, serve rice in a bowl then top with your Mexican beef mixture, add shredded cheese and a drizzle of sour cream.
