The sweet yet spicy Korean spiced meat, blended with fresh and crunchy Pico de Gallo, feta cheese, and lemon and dill sour cream, makes a refreshing yet filling Greek inspired pita that you will come to crave. Included is my homemade Korean spice recipe which is used to season the ground beef and can also be save to use for future meals. The combination of flavors produced here creates an umami like no other.

Ingredients & Directions:
6 Pitas
Greek Inspired Lemon & Dill Pico De Gallo:
1 Seedless Cucumber, Halved and Sliced
3 Roma Tomatoes, Cubed
1 Lemon, Juiced and Zested
1 Onion, Thinly Diced
1 Cup Feta Cheese, Chunked
Salt and Pepper, to Taste
2 Tbsp Dry Dill
Directions: Add all ingredients together in a bowl and set aside in the fridge until ready to serve. TIP make this before you begin cooking to allow flavors to marinate into the vegetables.
Lemon Dill Sour Cream:
1.5 Cups Sour Cream
Salt and Pepper, to Taste
2 Tbsp Dry Dill
1 Lemon, Juiced and Zested
Directions: Mix all the ingredients together then set in the fridge until ready to serve. TIP make this first to allow the flavors to marinate together while you cook.
Korean Spice :
1/2 Cup Chili Powder
1/2 Cup Smoked Paprika
1/4 Cup Fine Sea Salt
2 Tbsp Back Ground Pepper
1/4 Cup Brown Sugar
1/4 Cup Cumin
1/4 Cup Garlic Powder
2 Tbsp Mustard Powder
2 Tbsp Cayenne Pepper
Directions: Mix all ingredients together and store in an air tight container.
For the Beef
1.5lbs Ground Beef
1 Large Diced Onion
1 Yellow Bell Pepper, diced
Salt and pepper to Taste
3 Tbsp Korean Spice Blend
Directions: Add your ground beef and diced onions to a hot skillet, break into smaller chunks. Season with salt and pepper. Once beef is cooked, add your homemade Korean spice blend and bell peppers and stir together. Cook another minute or too then taste to check for seasoning. Add more spice, salt or pepper as desired.
Assemble your pitas as desired and enjoy!
