Jalapeno, Cheddar Cream Cheese Stuffed Burgers

Stuffed Cheese Burger

Hold the filler please! These super juicy " jalapeno, cheddar cream cheese stuffed burgers" require no filler, just the meat and a little bit of seasoning is all your need to make a great hamburger. Don't get me wrong, I love a classic hamburger like anyone else, but this is a next level, drool worthy Goliath of a burger. Top it with whatever toppings your taste buds desire such as caramelized onions, bacon, pickles, lettuce and tomatoes. Make it your burger! Get ready to fall in love with the food you make and the memories you make with it.

I will share some tips and tricks to get it just right. I hope you enjoy this recipe and can make some memories with your family and friends. Be sure to have some napkins at the ready.

TIPS AND TRICKS

Stuffed burgers can be tricky. If you have attempted it before then you understand. It is a challenge to get the filling to actually stay in the burger. The secret is to freeze the burgers before cooking. This not only helps to keep the burger together, but also to maintain the juices in the meat. There are 2 methods you can use.

Method 1 - make your cheese disks and place in an air tight container. Freeze for 30 minutes. Then add to the center of your meat mixture. Make sure you cover the cheese completely.

Method 2- After assembling your patties, cover and freeze the entire burger for 30minutes or until you wish to cook them. This is the method I prefer to use.

- Don't over work the meat, this will make the meat chewy

- If you are making a classic non stuffed hamburger and you find they shrink on you, the tip is to push a well into the middle of the burger before placing it in the pan. Give it a try and be prepared to be please with the results

- Turn the pan to medium heat and sear your burger. Once the pan is good and hot, turn to medium low heat. Cook with the lid on to lock in moisture and cook the inside of your burger .

- Only flip your burger once, cooking 4 to 5 min per side. If you have an oven safe pan, once you have cooked one side and flip your burger, place it in the oven for 4 to 5 minutes at 400 F to finish.

- For the cheese filling, feel free to half the portions in the recipe. I made it with a large cheese disk but halving this part of the recipe will still yield a good amount of stuffing for your burger.

Ingredients:

For the patties

1 1/2lbs beef and pork mix

1 tbsp Soya sauce

1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp onion powder

1/2 tsp each of salt and pepper

For the stuffing

1/2 cup cream cheese

3/4 cup shredded cheddar cheese

2 tbsp pickled jalapeño peppers chopped

Jalapeño Cream Cheese Filling

Directions:

- Combine your cream cheese, shredded cheddar cheese and diced jalapeños and divide into 4 equal parts. Shape into a Disk like shape using your hands.

- If using method 1, freeze for 30min in a sealed container (see tips and tricks above for more details) for method 2, set aside.

- mix you beef and pork with all your seasonings. Be careful not to over mix.

- Divide into 4 equal parts.

- Assembling each burger one at a time, split your meat mixture in half. Flatten one half in your hand and add the cheese disk to the center. Surround the cheese disk with the meat. (This half will go up the sides a bit) next add the other half of the meat on top of the exposed cheese disk and continue to work the meat together to seal the cheese in completely. Do this for all 4 patties. If using method 2, cover and freeze for at least 30min to 1 hour.

Pan frying burgers

- Place a large pan over medium heat adding oil. (I use the same pan I fried my onions in to add even more flavor) Once hot, add you burgers. Allow meat to sear then turn the heat to medium low. Keep the lid on except for when flipping your burgers. Only flip once. Cooking 4 minutes per side.

- In the last minute of cooking, add a slice of cheese to the top if desired.

- Place it on a bun of your choice and top it any way you like.
