This BBQ chicken pasta recipe offers a way to use up that leftover chicken. Use your favorite BBQ sauce or change it up and try something different. The joys of cooking your own meals, is you get to make it just how you like it.
Ingredients:
2 Cups Left Over BBQ Chicken, shredded
3 Cups Chicken Stock
2 Cups Heavy Cream
1/2 Cup BBQ Sauce
1 Can Diced Tomatoes and Juices
1 Large Onion, Diced
1 Bell Pepper, Diced
6 Cloves Garlic, Minced
1 Tsp Paprika
1 Tsp Basil
1 Tsp Oregano
1 Tsp Parsley
Pinch Salt and Pepper
1 Tbsp Corn Starch (for thickening)
4 Cups of Pasta of Your Choice, Cooked to al dente
Shredded Cheddar Cheese for topping
Directions:
Add diced onions to a large pot and sauté for a few minutes. Next add your minced garlic and stir together for 1 minutes.
Add Chicken stock, diced tomatoes, heavy cream and BBQ sauce, followed by all your seasonings. Do not add Corn starch, chicken or pasta yet. Cover and let simmer.
Meanwhile, Cook pasta to al dente in salted water, drain and set aside.
Make a slurry using corn starch and water, mix together then add to your simmering sauce. Stir together and continue to cook for a few minutes until thickened.
Add your shredded cooked chicken and pasta noodles.
Serve hot and top with shredded cheese.
