Taco Salad

Taco salad is pretty much a taco served in salad form. It some how makes it feel healthier yet it's still an indulgent meal to enjoy. The taco flavoring is carried throughout the dish thanks to a healthy dollop of creamy sour cream. This salad is both tangy and savory, loaded with meat, veggies, cheese with a pop of crunchy salty chips here and there. Taco salad reminds me of my best friend. This is one of her favorite meals, likely right next to actual tacos. Just like with tacos, make it your way by adding the ingredients you enjoy most.


Ingredients:

1lb Ground Beef

1 Medium Onion, diced

1 Packet Taco seasoning

Salt and Pepper to taste

1 Can Corn, cooked (optional)

2 Romain Lettuce Hearts,

2 Medium Tomato's, diced

Half a Seedless Cucumber, diced

2 Cups Shredded Cheddar Cheese

1 Cup Sour Cream

2 or 3 Handfuls Crushed Corn Chip (optional)

Avocado, Diced, Or Guacamole (optional)

Directions:

- Cook ground beef along with diced onions, salt and pepper. Once cooked, add taco seasoning with 1/2 a cup of water and simmer for 2 minutes (until reduced and thickened), set aside to cool.

- Wash lettuce thoroughly, and spin dry. Add to a large bowl.

- Add to lettuce, cooked corn, shredded cheese, diced cucumber and tomato. Add sour cream to cooked meat and stir to combine. Pour over salad and toss it together. If adding avocado or guacamole, add on top of each bowl when serving. Toss in crushed corn chips just prior to eating.
